Peanut Butter Pancakes


bullet1  1/4  cups pancake mix
bullet2 tablespoons sugar
bullet1/3 cup peanut butter (I the use crunchy kind)
bullet1 egg
bullet1/3 cup water
bullet2/3 cup milk
bulletIn a medium-sized bowl, combine the pancake mix and sugar.  
bulletIn another bowl, combine peanut butter and egg.  
bulletAdd the water and milk to the peanut butter and egg mixture.  Stir well.  
bulletAdd to the dry ingredients.  
bulletYou may need to add a little more pancake mix or water to alter the consistency to your preference. 
bulletLadle onto a hot griddle (about 325 degrees), cook and flip! 
bulletServe with honey butter (we like this better than pancake syrup)


bullet1/4 cup softened butter
bullet2 - 3 tablespoons honey
bulletCombine butter and honey.  Spread onto pancakes.
bulletThese are excellent warmed up, too.  Sometimes I make two batches and keep the leftovers in the fridge for a fast breakfast or snack--my husband loves them.
