Banana Nut Cake

 
bullet3 cups sugar
bullet1 cup shortening
bullet4 whole eggs
bullet2 tsp. vanilla
bullet1/2 tsp. butter flavoring
bullet3  1/2 cups flour
bullet2 tsp. soda
bullet1/4 tsp. salt
bullet1/2 cup buttermilk
bullet6 small ripe bananas, mashed
bullet1 cup chopped pecans
bulletMix first four ingredients in mixing bowl, beating until creamy.
bulletSift flour, soda, and salt gradually adding to first mixture alternately with the buttermilk.
bulletMix well.
bulletBlend in mashed bananas and pecans
bulletPour into greased or Pam sprayed loaf pans.
bulletBake at 350º until tested done.
bulletYou can use mini-loaf pans or bundt pan, if desired.  Keep in mind the baking time changes with different pans
bulletThis cake freezes well, and makes into nice little gifts for your friends.  Just wrap in colored Saran Wrap and stick a bow on them!
