Lemon Pudding Cheesecake

 

bullet1 package (8 oz) cream cheese, softened
bullet2 cups milk
bullet1 package Jello Lemon INSTANT PUDDING
bullet1 cooled 9-inch graham cracker crust
bulletPlace cream cheese in a bowl and stir with a fork until well softened
bulletAdd ½ cup of milk, a little at a time, blending until mixture is very smooth
bulletAdd remaining 1 ½ cups milk and pudding mix
bulletBeat with egg beater just until well mixed, about 1 minute
bulletPour into crust
bulletChill about one hour

GRAHAM CRACKER CRUST

bullet1 ¼ cups graham cracker crumbs (about 8 whole crackers)
bullet2 T sugar
bullet1/3 cup margarine, melted
bulletCombine all ingredients
bulletPress into bottom & sides of a greased pie plate
bulletBake in preheated oven - 350º for 12 to 15 minutes
bulletCool thoroughly and fill with pie filling
