Old-Fashioned Raisin Pie


bullet2 cups seedless raisins
bullet2 cups water
bullet1/2 cup brown sugar, packed
bullet2 Tblsps. Cornstarch
bullet1/2 Tsp. cinnamon
bullet1/2 Tsp. salt
bullet1 Tlbs. vinegar
bullet1 Tblsp. butter or oleo
bulletPastry for double 9 inch pie crust
bulletCombine raisins and water
bulletBoil 5 minutes
bulletBlend sugar, cornstarch, cinnamon and salt
bulletAdd to hot raisins and cook, stir until clear
bulletRemove from heat, stir in vinegar and butter
bulletCool slightly, then turn into pastry lined pan
bulletCover with top pastry or lattice strips
bulletBake in hot oven 425 for 30 to 35 mintues
bulletMakes 1 (9") pie
