Chocolate Pie

 

bullet1  1/2 cup sugar
bullet5 Tbsp. flour
bullet1/2 tsp. salt
bullet1/2 cup cocoa
bullet3 cups milk
bullet3 egg yolks, beaten
bullet1  1/2 tsp. vanilla
bullet1  1/2 Tbsp. butter
bullet2 (9 inch) baked pie crusts
bulletIn a saucepan, cook over medium heat the sugar, flour, salt, cocoa and
gradually add the milk, stirring constantly until mixture thickens and
boils
bulletBoil one minute and remove from heat
bulletGradually stir in the 3 beaten egg yolks, stirring fast to keep yolk from
cooking in hot mixture
bulletReturn to heat and cook one minute after mixture starts to boil again
bulletRemove from heat and stir in the vanilla and the butter, mixing well
bulletPour into the 2 (9 inch) baked pie crusts
bulletSpread with Meringue



Meringue Recipe

bullet3 egg whites
bullet1/8 tsp cream of tartar
bullet1/4 cup sugar
bullet1 tsp. vanilla
bulletpinch of salt
bulletIn a mixing bowl, beat the egg whites and cream of tartar until very stiff
bulletAdd the sugar, vanilla and salt, beating until well mixed and stiff
bulletSpread on the pies and seal to the crust
bulletBake at 350 degrees until browned
