Chocolate Pie
1 1/2 cup sugar 5 Tbsp. flour 1/2 tsp. salt 1/2 cup cocoa 3 cups milk 3 egg yolks, beaten 1 1/2 tsp. vanilla 1 1/2 Tbsp. butter 2 (9 inch) baked pie crusts
In a saucepan, cook over medium heat the sugar, flour, salt, cocoa and
gradually add the milk, stirring constantly until mixture thickens and
boilsBoil one minute and remove from heat Gradually stir in the 3 beaten egg yolks, stirring fast to keep yolk from
cooking in hot mixtureReturn to heat and cook one minute after mixture starts to boil again Remove from heat and stir in the vanilla and the butter, mixing well Pour into the 2 (9 inch) baked pie crusts Spread with Meringue
Meringue Recipe
3 egg whites 1/8 tsp cream of tartar 1/4 cup sugar 1 tsp. vanilla pinch of salt In a mixing bowl, beat the egg whites and cream of tartar until very stiff Add the sugar, vanilla and salt, beating until well mixed and stiff Spread on the pies and seal to the crust Bake at 350 degrees until browned
