Grandma Thomison's
Easy Chicken Casserole

bullet2 cans Tyson chicken (or home-cooked equivalent)
bullet1 can Campbell's cream of chicken soup
bullet1 can Campbell's cream of celery soup
bullet1 pkg. cornbread stuffing mix (or homemade with seasoning, see recipe
below
)
bullet1/4 cup margarine
bullet1 1/2 cups broth (or broth from canned chicken & water)
bulletPlace chicken & soups in 8 1/2 x 11 pan & stir together, spreading evenly
in pan
bulletMix stuffing mix with margarine & broth, spreading over chicken & soup
mixture
bulletBake at 300 degrees for 30 minutes 
bulletCan be frozen & baked later


Grandma's Homemade Stuffing Mix

bullet

1 pan cornbread

bullet

5 - 6 slices bread

bullet

2 tblsps. minced onion

bullet

2 tblsps. celery flakes

bullet

2 tsps. (or to taste) poultry seasoning

bullet

Salt & pepper, if desired
bullet

Crumble breads, spread on cookie sheet

bullet

Put on lowest setting in oven to dry

bullet

When dry, bag

bullet

Bag onion, celery & seasonings separately

bullet

Mix with broth when ready to use, or follow recipe directions
