Turkey & Dressing

10 - 12 lb. Turkey

Thaw turkey completely

Wash turkey inside and out well

Sprinkle inside and out with salt

Wrap turkey with heavy duty aluminum foil

Place in roaster pan

bullet

Pour enough water in bottom of roaster to come up about 3 inches of covered turkey

bullet

Bake @ 250º about 12 hours (all night)


For Southern Cornbread Dressing

4 cups cornbread crumbs

bullet

5 slices bread, crumbled

bullet

1 cup finely chopped celery

bullet

3 Tbsps. chopped onion

bullet

1/2 Tsp. Black pepper

bullet

1 Tblsp. Sage

bullet

Add the turkey broth in roaster to the above and mix well

Remove turkey from roaster pan and place on large platter

bullet

Place dressing in roaster pan

bullet

Bake @ 400º for about 1 hour

Turkey can be de-boned and sliced and placed on top of dressing in
roaster pan or served separately

Comment: This recipe was from the kitchen of Mary E. Keel, my Mom, who died in 1993.  Many happy memories came to me while typing this recipe as it was my Mom's way of fixing the turkey and dressing when us kids were growing up. We always looked forward to Thanksgiving Day, as it was a special day when family and church friends got together with people in every room laughing, visiting and giving thanks to God for all His abundant blessings on us all. Mom and Dad are gone now, as many of your folks are, but we can hold on to those memories and still share this time of the year with those of our families and with our dear church families of today, and carry on the wonderful tradition of being with others at this time of year and sharing our blessings.
