Chicken Salad Croissant Sandwiches

bullet4 - 6  large croissants
bulletgreen leaf lettuce
bullet4-6 slices swiss, provolone, or cheddar cheese
bullet2 1/2  cups shredded cooked chicken
bullet1/2 cup chopped walnuts or cashews
bullet1/3 finely chopped celery
bullet1/2 cup mayonnaise
bullet1/4 cup sour cream
bullet3/4 tsp. curry powder
bullet1/8 tsp. Cajun seasoning
bulletMix chicken, nuts, and celery.
bulletIn a small bowl, combine mayonnaise, sour cream, curry and Cajun seasoning.  Mix well.
bulletPour over chicken mixture and stir well.
bulletRefrigerate for about an hour.
bulletPlace lettuce, cheese slices, and chicken mixture on croissants.
bulletYield:  4-6 servings
bulletYou can really change this up to suit your taste.  You could add hard-boiled egg, put more/less sour cream, pickles,  etc.    I make it a little different every time!
