CHEESE POTATOES

6 tablespoons butter

6 tablespoons plain flour

3/4 teaspoon salt

1/4 teaspoon pepper

bullet

3 cups milk

bullet

12 oz. Process American cheese, cubed

bullet

8 cups Irish potatoes, peeled, thinly sliced, & cooked

bullet

Paprika
bullet

Melt butter; add flour, salt & pepper.

bullet

Cook over low heat, stirring until mixture is smooth & bubbly.

Add milk all at once; cook & stir over medium heat until thickened & bubbly. 

bullet

Cook & stir 1 minute more.

Remove from heat. 

bullet

Add cheese & stir until melted.

bullet

Place potatoes in a large bowl; gently stir in cheese sauce.

Transfer to a greased 2 1/2 quart baking dish.

Sprinkle with paprika.

bullet

Bake, uncovered, at 350 for 30 minutes.

Yield: 6-8 servings
