HAWAIIAN YAMS

2  1/2 cups sweet potatoes

1/2 teaspoon salt

1/2 stick butter, optional 

bullet

1 cup sugar

bullet

1 egg 

bullet

1 cup evaporated milk

bullet

1 teaspoon vanilla extract
bullet

Cream & bake at 350 for 30 minutes.

Let cook for 20 minutes while preparing the topping.


Topping

bullet

1 small jar maraschino cherries & juice

bullet

3 teaspoons cornstarch

bullet

small amount of red coloring (optional)

bullet

1 large can crushed pineapple with juice 

bullet

1 cup sugar 
bullet

Mix cornstarch & cherry juice; then add food coloring.

bullet

Mix all ingredients & cook slowly until thickened. 

bullet

Pour over potatoes & serve.
