Sweet Potato Casserole

 

bullet3 Cups mashed sweet potatoes
bullet1 cup sugar
bullet2 eggs
bullet1 tsp. vanilla
bullet1/2 cup butter or oleo
bullet1/3 cup milk
bulletBoil about 6 medium sweet potatoes until tender
bulletPeel and mash
bulletAdd all the above ingredients and mix well
bulletPut in a greased casserole dish

TOPPING:

bullet1 cup light brown sugar
bullet cup flour
bullet1/3 cup butter or oleo
bullet1 cup chopped pecans
bulletMix the above ingredients well and crumble on top of potatoes
bulletBake at 350 for  25 to 35 minutes
bulletComment: This recipe will be a delightful addition to your Thanksgiving Dinner. It was my privilege to attend the Annual Thanksgiving Gospel Meeting at Pansy, Alabama for the first time in 1993 and again in 1994 and 1996. The sisters in this congregation really know how to spread a very delicious Southern style feast which includes turkey & dressing, collard greens, green lima beans, sweet potato casserole and pecan pies, among many other delicious dishes. This recipe for sweet potato casserole was given to me by my son-in-law's great aunt who is listed below. Submitted by Jean Roe.
