VIDALIA SWEET ONION PIE

1 cup Ritz cracker crumbs

1/2 stick melted butter

bullet

2 cups thin sliced onions (Vidalia)

2 tablespoons butter

bullet

2 eggs

bullet

3/4 cup milk

bullet

Dash of black pepper

bullet

3/4 teaspoon salt

bullet

Dash of Tabasco

bullet

1/2 cup grated sharp cheese

bullet

Paprika

bullet

Parsley
bullet

Mix cracker crumbs with melted butter.

Press into 8" pie plate.

bullet

Sauté the onions in 2 tablespoons butter until clear, but not brown.

Spoon into crust.

bullet

Beat eggs with milk, salt, pepper & Tobasco; pour over onions.

Sprinkle cheese & paprika over onions.

bullet

Bake at 350 for 30 minutes
bullet

Test with knife; when it comes out clean, it's ready.

Garnish with parsley.
